I make a non-fat blueberry pancake that even my family eats.

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 Tbls sugar
1/2 tsp salt

6 0z. fat-free blueberry yogurt in measuring cup
add skim milk to 1 1/2 cups
6 0z. frozen blueberries (use the cup the yogurt came in)

3/4 cup of egg whites or no cholesterol egg substitute, whipped

blend everything together and use a spray of olive or canola oil to keep from sticking

You will not notice that there is no fat in these things.
